What’s the story?
Grown in the highland region of Shakiso in the Guji Zone of Oromia, Ethiopia, this coffee reflects the exceptional terroir and meticulous farming traditions of one of the country’s most distinguished growing areas. Located at an elevation of 2,200 meters above sea level, the processing station that handled this lot sits among the highest in Ethiopia, contributing to the coffee’s vibrant and complex flavor profile.
This is true Highland Coffee, grown on smallholder plots scattered across Shakiso’s fertile slopes. While coffee is the primary cash crop, farmers also cultivate sugar cane, false banana, spices, and vegetables, contributing to a diverse and nutrient-rich environment.
Although Guji coffee was once grouped with neighboring Sidamo and Yirgacheffe, it now stands apart for its distinct flavor characteristics and consistently high quality. The region’s steep mountainous terrain and abundant rainfall create ideal conditions for coffee cultivation, supporting complex and expressive cup profiles.
Ripe coffee cherries are selectively handpicked and carefully dried on raised beds for 2 to 4 weeks. Regular raking ensures even drying, preserving the clarity and nuance in the cup.
