What’s the story?
This is the third coffee we’ve had from the brilliant Forest Coffee, a specialist coffee importers from Colombia, who are bringing together and marketing beautiful coffees from exceptional coffee producers around their region. We are very grateful to them for the opportunity to taste this coffee from the wonderfully named Wilder Lasso.
This juicy Pink Borbon is a masterpiece, a black honey which was processed with a 96 hour anaerobic fermentation then depulped and taken to raised beds with lower temperature to create more oxidation of the mucilage and creates a crust which makes the sugars remaining coffee fruit stick to the parchment while drying. The coffee is then stabilised for at least 20 days in plastic bags before milling.
This has created a coffee with an exceptional balance between sweet acidity and buttery body. Drinking the filter, the first sip hits with a citrus note then there is a juicy peach fruitiness carried on a super smooth mouthfeel. There is also a subtle background note of ginger. It’s both comforting and complex, with that buttery body making for an extraordinarily yummy coffee.
Wilder has come from a scientific research background and came to work with his dad on the family farm in 2017. This coffee is a result of the careful nurturing of the Pink Bourbon varietal enhanced by an advanced method of processing the coffee.
Because of his passion for coffee and family history in coffee producing, Wilder entered the coffee world in a unique way, with his background in genetics and also his relentless energy of learning helping him carefully select different varieties from various origins to make the most of the terroir and high altitude of Finca El Diviso.
