Chocolate Ganache, Peach Cordial, Strawberry

On cupping we have found an extremely satisfying chocolate ganache sweetness with great body and then a delightful soft fruit jamminess reminiscent of peach cordial and a hint of strawberry. This has carried through to the espresso which oozes with those fruity flavours and adds a layer of floral complexity, with a note of elderflower.

TASTING NOTES

Chocolate Ganache, Peach Cordial, Strawberry

We had the natural process coffee from Banka farm last year, it was so popular and flew out. So no surprise when we cupped some sample lots from the excellent Christian and Shirani at IndoChina and it stood out as a winner again!

Banka farm and washing station is based in Menglian Dai, Lahu and Va Autonomous County, Yunnan and is named after the two adjacent villages (Banka Yi and Banka Er) where the coffee cherry is harvested. Experimenting with processing methods such as yeast fermentation and growing new varieties such as Pacamara and Yellow Bourbon has seen their coffees improve year on year and you can really taste this in the cup.

IndoChina coffee has been working tirelessly with producer groups from East and South East Asia on improving coffee quality and sustainable practices within producer groups. This work means that each year we cup better and better coffees and get to roast them for you lovely folk. Also it means that farmers and producers get more money per kilo of coffee each year and can grow their business and secure a sustainable livelihood in coffee farming. Winner winner!

The Banka Natural comes to us courtesy of Yunnan Coffee Traders (YCT for short). They own the Banka wet mill where this coffee is processed and also part of Banka farm. This start to finish model means that quality is tightly controlled, monitored and recorded to ensure that delicious coffees can be grown and processed consistently. The use of an optical sorter (a machine that sorts coffee cherries by colour, thus ripeness) means that lots can be separated by quality and sold separately. This level of sorting means that the price per kg going back to the folks who do the hard graft of growing increases and rightfully so.
